WHere is an easy version of a cocktail from the seasonal menu. It's a batch pre-mixed that's packed with the tastes of the holiday season, making it ideal for hosting a holiday party. Save the extra syrup you can use for brunch beverages, sweets, or to make additional servings of the drink.

Yields 10 people
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Premix (produces 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Method
For the Cordial: Put the listed items in a pot, bring to a gentle boil, mixing so the sugar melts. Next, remove from the burner allowing it to cool down fully. Decant into a sterilised bottle, seal keeping it chilled, where it will keep for about a month.
For the Cocktail Base: Pour all the liquids into a sizeable container, let it rest for one hour, then filter it best through muslin, so it's completely strained.
To serve: Measure 85ml of your cocktail base into your cocktail shaker packed with ice, and agitate gently for one minute to cool it down. Filter into an cold coupe glass or equivalent, decorate with some cranberries adding the final touch by giving it a quick spritz with the mandarin essence over the drink.
